What are the precautions for harvesting Maitake mushrooms?
Due to the fragile and easily broken nature of the fruiting body caps, special care must be taken during harvesting.One day before harvest, reduce the indoor relative humidity to about 85%. This helps minimize harvest loss and damage.The optimal harvesting time is during the middle to late maturity stage of maitake mushrooms, approximately at 80% maturity. Externally, this is indicated by the gradual fading of the white edges of the caps. At this stage, the cap tubes have not yet formed, and spores have not begun to eject. Harvesting at this time helps preserve the mushroom’s aroma, color, and structural integrity.Typically, this stage occurs after about 80 days of growth.
